Very simple and very good. It reminds me of my childhood and when I eat it I can almost hear my granny singing "La chiamavan Capinera pe' i suoi ricci neri e belli..."
Difficulty: Easy
Serves 6
300 g flour
200 g sugar
3 eggs
100 g butter
1 bag baking powder
1 bag vanillin
150 g amaretti
100 g minced almonds
1 glass milk
1 tbs icing sugar
Preparation Mix flour, sugar and melted butter in a big bowl. Add eggs one by one, mixing, and most of the milk. Then add vanillin and baking powder, crumbled amaretti and almonds. Stir well considering that the batter should result to be not too sticky nor too thick: you might need the rest of the milk to fix it. Butter and flour your baking ring-shaped pan (a big one!), pour in the mixture and bake in preheated oven for about 35 to 40 minutes. Before turning off the oven check if cooked with the usual toothpick method. When the cake has cooled down sprinkle with icing sugar.
