The first natural instinct was "white chocolate and coconut", but my boyfriend doesn't like cocconut! On the other hand, he loves apple cake and I absolutely wanted to use that white chocolate tablet that had been waiting in the pantry way too long. Thinking and thinking, I got the idea from the faboluos "Cioccotorta al Profumo Nero" by Dadra (in Cooker's database) and I arranged this recipe. I had no doubt about the result considering how fast this cake disappeared once I made it.
- 120 g all purpose flour
- 80 g potatoe or corn starch
- 2 eggs
- 100 g brown sugar
- 125 g whole white yogurt
- 25 g apple dried sticks (I used a bag of Melinda stiks!)
- 2 tablespoons toasted and chopped hazelnut
- 1/2 coffee cup of Cointreau (or Grand Marnier or other orange liqueur)
- 1/2 vial orange essence
- 1 bag baking powder
- 1 little piece of butter
- cinnamon powder
- salt
Melt the chocolate in a bain-marie (or in microwaves) together with the butter and mix with a spatula until cool. In a bowl beat the eggs with the sugar, the orange essence and a pinch of salt, until they are white and foamy. Add the yogurt and the liqueur and keep mixing. Add melted chocolate to the eggs cream gently mixing until the mixture is smooth. At this point combine the flour and the starch sieved together with the baking powder and a dust of cinnamon and keep mixing to get a smooth mixture, thick enough (otherwise the apples would sink! Add another spoonful of flour if necessary). Finally, add the apple sticks, eventually breaking those too long, and the chopped hazelnut. Pour the mixture in a silicone baking pan (or in a buttered and floured traditional pan) and cook in pre-heated oven at 180°C for about 35-40 minutes (the toothpick test is effective!). Remove the the lukewarm cake from the pan and let cool completely on a grid. Spread with confectionery sugar before serving, if you like.
